- 1 cup grated zucchini
- 1/2 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the grated zucchini, cocoa powder, flour, sugars, oil, eggs, and vanilla.
- Mix until just combined.
- Add baking soda, baking powder, and salt; fold in the chocolate chips.
