Delicious and moist muffins made with zucchini and cocoa powder, perfect for a healthier treat.

Ingredients

  • 1 cup grated zucchini
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the grated zucchini, cocoa powder, flour, sugars, oil, eggs, and vanilla.
  3. Mix until just combined.
  4. Add baking soda, baking powder, and salt; fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool on a wire rack before serving.

Notes

  • These muffins can be stored in an airtight container for up to 3 days.
  • You can substitute applesauce for some of the oil to reduce fat content.
