Ingredients
  

  • 2 large purple sweet potatoes Okinawan or Stokes variety
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 1/2 teaspoon garlic powder optional
  • 1/2 teaspoon paprika optional
  • Fresh herbs for garnish rosemary, thyme, or parsley

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash the purple sweet potatoes thoroughly and pat them dry. Peel them if desired.
  • Slice the sweet potatoes into evenly sized rounds or wedges.
  • Toss the slices in a bowl with olive oil, salt, pepper, and optional spices.
  • Spread the sweet potato pieces on a baking sheet lined with parchment paper.
  • Roast in the oven for 25–30 minutes, flipping halfway through.
  • Garnish with fresh herbs and serve hot.
