Ingredients
  

Dry Ingredients:

  • 3 cups rolled oats
  • 1 cup chopped nuts almonds, pecans, or walnuts
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Wet Ingredients:

  • cup coconut oil
  • cup honey or maple syrup for a vegan option
  • 1 teaspoon pure vanilla extract

Optional Add-Ins (after baking):

  • ½ cup dried fruits raisins, cranberries, or chopped apricots
  • ¼ cup shredded coconut
  • ¼ cup mini chocolate chips

Instructions
 

  • Preheat Oven: Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  • Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, chopped nuts, cinnamon, and salt. Stir until evenly distributed.
  • Prepare Wet Ingredients: In a small saucepan, melt the coconut oil over low heat. Add honey (or maple syrup) and vanilla extract. Stir until smooth and combined.
  • Combine Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients. Mix well, ensuring every piece is evenly coated.
  • Spread and Bake: Spread the granola mixture evenly on the prepared baking sheet. Bake for 20–25 minutes, stirring halfway through for even toasting.
  • Cool and Add Extras: Remove from the oven and let the granola cool completely on the baking sheet. Once cooled, stir in any optional add-ins, like dried fruits or chocolate chips.
  • Store and Enjoy: Transfer the granola to an airtight container. It will stay fresh for up to 2 weeks at room temperature, or up to 3 months if frozen.
